I was browsing the web for kraut recipes (yes, I am an unashamed sauerkraut lover) and found this interesting recipe. I tried it out the other day, and it turned out really well! It's a moist, dense bread, almost like a savory quick bread. Very tasty with a little butter. I'm thinking it would be good with cream cheese, too, but I didn't have any to try..... Guess I'll have to bake another loaf, eh?
Cottage Cheese Kraut Bread
1 packet dry yeast
¼ cup warm water
½ cup cottage cheese
2 tbs. brown sugar
1 tsp. salt
1 egg
2 tsp. caraway seed
2 tsp. minced onion
2 ¼ cup flour, separated
1 cup sauerkraut, drained
1. In a large mixing bowl, dissolve yeast in warm water. In a saucepan, combine cottage cheese and salt, heat to lukewarm. Add cottage cheese mixture to yeast.
2. Stir in egg, caraway seed, onion and ¼ cup flour. Beat this batter very well.
3. Add the rest of the flour, mixing thoroughly. Dough may be crumbly. Stir in kraut.
4. Turn mixture onto floured surface and knead until plump. Put in greased bowl, cover and leave in warm place until doubled in size (about 1½ hours).
5. Punch down dough and put into greased bread pan. Let rise again until doubled. Put in preheated 400 degree oven and bake 20-25 minutes. Bread is done when crust gives a hollow sound when tapped.
