I really enjoy browsing through old cookbooks and trying out recipes, so when I came across this dramatic photo, I had to give it a try. It's from an old Betty Crocker cake mix idea booklet, printed sometime in the 40's, I'd guess (alas, there is no copyright date). It gives ideas on how to dress up various cake mixes, from the standard yellow cake & devils food, to a few I've never heard of, like Peanut Delight and Chocolate Malt. I'm guessing they discontinued those flavors somewhere along the line...... The picture of the Flaming Peach Jubilee Cake intrigued me, so I tried it. Now, I didn't have round cake pans (I rarely make anything but the standard 9x13) and I used Cool Whip instead of whipping the cream myself. I used a regular Spice Cake mix, since I don't think they have a Honey Spice (or maybe it's the same thing). I also clearly do not have the lovely background (and touch-up staff) that the Betty Crocker Kitchens had.
